Chickpea choc-chip cookies

Yep, you read that right - chickpeas! These cookies are the softest, most delicious alternative to highly processed/sugary treats.


Ingredients


1 can chickpeas (drained and rinsed)

1 teaspoon vanilla bean extract

2 big tablespoons natural peanut butter (ingredients will say 100% peanuts)

2 tablespoons honey

1 teaspoon gluten free baking powder

Pinch of salt (if peanut butter doesn't contain salt)

1/3 cup dark choc chopped into small chunks or cacao nibs

2-3 tablespoons water


Method

  1. Pre-heat oven to 180ºC

  2. Place all ingredients (minus the chocolate) into a food processor and blend until combined

  3. Stir in the choc chips and spoon out the mixture onto a tray lined with baking paper. The mixture will be sticky so it's best to use two spoons to create a tablespoon sized dollop

  4. Bake for 20-30min, until golden (longer for larger cookies)

  5. Sprinkle with additional salt once out of the oven

Cookies will get firmer once cooled.
