Cashew Carbonara

Who doesn't love a 10min nutritious dinner!

Sauce Ingredients:

  • 1 cup cashews (soaked in warm water for at least 15min - can soak over night in a glass jar)

  • 3/4 cup water

  • 1 tsp fresh rosemary

  • 2 garlic cloves

  • 1/2 roughly chopped onion

  • 2 tablespoons nutritional yeast (can be found in the health food section of supermarkets or health food stores)

  • 1/2 lemon freshly squeezed

  • Salt and pepper to taste


Add all ingredients into an electric blender and blend until smooth. Pour ingredients into a medium heated saucepan.

Optional to add to sautéed mushrooms, chicken, or any other meat/vegetables.

Serve with organic fettuccine (I like to use brown rice fettuccine, mung bean or gluten-free rice pasta).

*Can also be served with zucchini fettuccine (simply peel the zucchini to resemble fettuccine and add to the frying pan to heat through).
